Educational tool that introduces the concept of food waste/ food sustainability
Food waste, a component of organic waste in our cities, is a significant cause of climate crisis. Further, it represents a loss of valuable resources that could otherwise be used to feed humans, animals, and cultivate farmland for new crops.
More than 259 million pounds of food are wasted/thrown away each day in the United States. This number is more than the amount of food that would be needed to feed the one in nine people and one in six children in the United States who struggle with hunger.
Ashley resides in Tarrant County, Texas.
In Fort Worth’s Tarrant county community food insecurity is at 18.1 percent.
That is 2.7 percent above the national average covering a total of 340,620 people who are food insecure.
Ashley works for a local hospital district in food access/ and food policy. Here she is involved in various food access works including a food recovery initiative which diverts suboptimal produce from grocery store waste bins to either 1) local area farms for composting or 2) school pantries for consumption.
She is passionate about bringing equitable access to nutritious foods to residents of her community while educating young minds of the importance of limiting food waste/ and food sustainability. Oh to be a Banana has been written with this goal in mind.
A portion of all book proceeds will go towards supporting school and community gardens in Tarrant & Parker County Texas.
Ashley is a married mother of three who holds a bachelors degree in Nutrition with an emphasis in Wellness. She is a certified health education specialist CHES.
